Flourless Fudge Brownie Cookies

Hello all!

First of all, I feel like I have been neglecting my blog for the past week. I apologize for being absent. Summer school is almost over now and I have just the final to go. Finally, I can see the light! Nothing exciting has been happening around here (unless you count making numerous trips to Racetrac for Sodapalooza fun). So yeah, like I said, nothing exciting. I am looking forward to finally being able to sleep in. Which won't be until at least a week and a half. 


Anways, lately I have been craving sweets, okay I always do, but because I always do I wanted to find something that I could make that was semi-"healthy"but that actually taste like dessert (sorry but apple slices with cinnamon  just doesn't cut it). So when I found this wonderfully simple recipe I was overjoyed. I pretty much dropped everything that I was doing and ran straight to the kitchen to get my fix.*

The cookies only call for 6 ingredients which is just great, especially when you make them short notice. Literally, just throw all the ingredients in a bowl and mix your little heart away. Warning; the dough/batter is super liquidy. I thought I had done something wrong, so don't you worry, liquidy is normal. 

Once all the mixing is done, just place (more like spoon) the batter onto the cookie sheets and bake them in the oven for 8-10 minutes. You'll know they're ready when the cookies get all nice and crackly. Unfortunately, the cookies seem to deflate as they cool, which is a definite bummer when it comes to taking pictures. But alas, life will go on. 

When my roommate came home and tasted the brownie cookies, she protested "Seriously Kendall, why did you make these, I don't need more dessert. To which I quickly shot back, "don't worry, there's no sugar in them!" *Moment of silence for this remark* 
There is indeed sugar, powdered sugar that is. Which apparently makes me feel less guilty eating them, I hope it does for you too. 

The cookies turned out to be super delicious! They kind of taste like the chewy edges of brownies, which just happens to be my favorite part. My cousin came to stay with me last weekend and she loved them and kept asking what they were called... that being said they are "kid-friendly" as well. 

So if you've been having an uneventful week like me, make these brownie cookies, because they will totally and completely  change it.  Just kidding. Maybe. 








Ingredients:

3 cups of powdered sugar
3/4 cup of cocoa powder 
1/4 tablespoon of salt 
4 large egg whites
1 tablespoon of vanilla
1/3 cup of semi-sweet chocolate chips or 1/2 cup of mini semi-sweet chocolate chips

Directions: 

Line 2 cookie sheets with parchment paper
In large bowl, mix together powdered sugar, cocoa powder, and salt
Stir in vanilla and egg whites
Whisk batter until ingredients are mixed
Stir in the chocolate chips
Pour batter onto cookie sheets (make sure to leave space for cookies to spread)
Bake in oven for 8-10 minutes at 350
Allow cookies to cool completely before eating

Oh yeah, and did I mention these cookies are around 65 calories a piece? Not too shabby.

The Liebster Award

Hello everyone!

About a week ago Kat from, Clayton Family Kitchen , nominated me for a Liebster Award. I had no idea what it was but I was super excited to find out. The Liebster Award is an award passed on from one blogger to the next. It's pretty neat because it's a way to introduce yourself to other bloggers which is great for expanding your audience and building relationships via blog.

So here's how it works. I tell 11 random facts about myself, then I answer the 11 questions Kat  has provided me. Lastly, I pass it on to 11 more bloggers and ask them 11 questions that I have come up with! Are you excited? Okay let's go. 


11 Random Facts About Me


1. I'm literally addicted to Diet Coke, though currently I am trying to kick the habit. (But I'm drinking one as I type... busted.)


2. The most important thing to me in life is my family.


3. I want to be neighbors with my parents and siblings when I'm older. (see 2)


4. I tried to go without deodorant to become more natural and decrease the chemicals in my body. I made my own and it worked...until it didn't. 


5. I have had over 10 heart surgeries. 


6.  I have to set between 8-12 alarms every morning to ensure that I get up on time. 


7. Last summer my mom surprised me with tickets to Late Night with Jimmy Fallon, which is still my claim to fame (I'm in the background dancing with a pink shirt when Jake Owens performs).


8. I pierced the third hole in my ears, by myself, when I was a junior in high school as a act of defiance against my parents... they weren't even mad when they found out. Fail.


9. I like to listen to classical music when I take baths. And I recently started to listen to french music when I write. I don't know why but they both just help me focus.


10. Becoming a mother is my number one goal and aspiration for life (and having a pretty cool husband would be nice too).


11.  I am deathly afraid of cows. Oddly enough, my family bought our first cow (really a steer) this year, but he doesn't bother me as much. 




1.What is your favorite vegetable and what’s your favorite way to eat it?
Brussel Sprouts. I love them roasted... oh they're great. 

2. What’s your favorite flavor of ice cream?
It differs a lot, lately it has been coffee.

3. What is your favorite type of music?
I would have to say country, even though I like music from a lot of different genres. 

4. What’s your favorite thing to do on a Saturday afternoon?
Anything that is adventurous. Like a Farmer's Market or musical... not like bungee jumping.

5.What’s your favorite cookbook?
All things Rocco. His recipes are healthy but still normal foods. And he's so dreamy.

6. Are you a planner or procrastinator?
I so wish I could say planner, but sadly I am a total procrastinator. 

7.What’s your favorite restaurant?
Newks! Oh my gosh, it's the best. I don't have one where I live so when I go home I just have to eat it. Last time I went home I ate it two days in a row.. I just can't resist. 

8. Do you have a favorite family recipe?
Yes, I would have to say it would be my mom's banana pudding. It is practically heaven in your mouth. 

9. If you could do anything for one day, what would it be?
This is actually a really hard question for me because I feel like there are so many things I want to do. I would have to say I would want to be a cast member  or guest host on SNL. 

10. Are you a cat person, dog person or both (or neither)?
Definitely dog. I'm weirdly freaked out by cats. 

11. What’s the best advice you can give about creating a successful blog?
Spend time getting to know other bloggersThis was one of my hardest lessons to learn because I didn't want to come across as desperate or weird. I know it can be super awkward and intimidating to comment on someone's blog or Instagram picture, but other bloggers are your biggest advocates. We're all here to help one another and support each other.

Farmers Market

I went to the Dallas Farmer's Market in June with my lovely mom. If I'm being honest, it wasn't what I was hoping it to be but it was still cute and something different so that's a big plus to me. 



Seeing that Dallas is a big city, I was expecting gorgeous fruits and flowers galore. What we got was rotting apples and the garden man yelling at us to buy a basil plant.

We planned this trip to the DFM a couple days in advance just so we I could prepare for the early morning. I woke up bright and early in a perfectly cheery mood and came downstairs to find my mother, in bed, in her pajamas, watching Criminal Minds. I got sucked in, of course, and instead of leaving by 9:30 like we planned, we were stepping into the shower at 9:45. 

This summer was supposed to be my "get fit" summer... well that didn't last very long, but remember we're still in June when all this happened.  Right before we walked out the door, (at practically midnight) we made green smoothies with a Vitamineral Green mix. Immediately upon tasting the drink my mom gagged as I pretended to enjoy this nasty thing.  Two sips later I obliged and dumped the drink along with hers. 

After much discussion and comparing of nutritional facts, we decided to stop at Starbucks to get smoothies. The smoothie was too liquidy and didn't have enough ice according to my mom, and at this point I was just so over everything I didn't even want mine. So the Starbucks smoothies were also disposed of. 

When we arrived at the DFM, my spirits were lifted instantly... until we walked into the first building. The supposed "artisan and bakery" area was more or less three stands selling honey, two chunks of cheese, and dried up bath bombs. The biggest attraction was the BBQ sold in the food court...literally people wait over 2 hours for this stuff.

I have to say the funniest part was when we stopped at the flower booth. When we walked by the first time we were told that the basil plant was $3, but since it was the first booth we passed we held off on the basil buying until we saw the rest of the produce. 

Lucky for flower booth #1, everything else kind of sucked. But unlucky for us, by the time we made it back around to the booth the basil had doubled in price. When we told the man that his son had told us a cheaper price before he literally yelled at us to take the plant and pay him. 

Oh the best part of it all, we stopped by Trader Joe's on the way home where basil plants were sold for $2. Fail.

The Bucket List

Hello Hello!

Okay so I have been making bucket lists for quite some time now (I have one for my life in general but I also make separate ones for every season) but I never actually complete any of the lists. In lieu of my new years resolution I am now making it an official goal of mine to complete my bucket lists. 




While most bucket lists consist of "once in a lifetime" things,  I'll be focusing on adventures that will make my everyday life more fun. I will be completing a different list for each season. Which is much more reasonable and much more fun!:)

I have been finishing up my summer list all week long and I am so excited to share it with you all! 


       Summer Bucket List

-  Go to the Dallas Arboretum
- Eat at a food truck
- Take a calligraphy class
- Go to College Station
- Start a monthly breakfast club
- Find a job
- Read 3 books (Then Came You, Divergent)
- Go to a horse ranch
- Make homemade ice cream
- Eat at Rise No 1
- See a play
- Go to a baseball game
- Attend The Hundred
- Go to the farmers market *
- Make a new friend
- Have a round birthday cake with tall candles
- Eat at the german restaurant in downtown
- Learn the name of the german restaurant 
- Host a get-together/ party

- Bake my mom's Texas Sheet Cake
- Spend more time reading the Bible

Social Media

Social media is so important in the blogging sphere. It allows readers to keep up with the bloggers in more ways than one and more importantly it allows the bloggers to interact with readers on a more personal level. Social media actually gives me a way to get to know YOU. 

By following me on twitter you will get notified via twitter when I post blogs/pictures/ect... basically everything about my blog life.  You can also see who my favorite bloggers are and find some amazing new blogs as well.


Following my personal twitter will give you the opportunity to get to know me on a more personal level. I tweet about my thoughts and occasionally about my blog. I plan on tweeting more about my blog on both accounts. 


My Instagram is filled with photos of my everyday life. I usually post a sneak peek of what will be coming up soon on my blog.

Facebook is a great way to get in touch with me, since I am on quite a bit. I update my Facebook when there is a new blog post. And I hope to be making a page soon that will be completely devoted to Simply Kendall Rose and all things blog.
